Course Description

This course provides an overview of health and nutrition education for the K-12 classroom teacher. Topics include wellness and nutrition, cardiovascular health and exercise, stress management, the use and abuse of alcohol, tobacco, and drugs, and sexually transmitted diseases. Participants assess personal health habits through health assessments and reflections. Plans and resources for sharing important health and nutrition information with students are also explored.

This graduate course is 4 weeks.

Attendance and participation are mandatory in all university courses, and specific requirements may differ by course. If attendance requirements are not met, a student may be removed from the course. Please review the Course Attendance Policy in the Catalog for more information.

This course is not available for enrollment to residents of Alabama, Arkansas, and Kentucky.

Topics and Objectives

Wellness and Nutrition

  • Define wellness.
  • Identify the seven dimensions of wellness.
  • Describe healthy lifestyle recommendations.
  • Identify the relationship between nutrition and health.
  • Describe the effects of poor nutrition.
  • Analyze personal food intake for nutritional value.
  • Develop a lesson plan to teach students about the USDA’s MyPlate Nutrition Guide.

Cardiovascular Health and Exercise

  • Describe the risk factors associated with cardiovascular disease.
  • Analyze personal risk for developing cardiovascular disease.
  • Explain how the risk for coronary heart disease can be reduced.
  • Identify the benefits of exercise.
  • Analyze the effect of exercise on the prevention and management of diabetes.
  • Develop an age- and grade-appropriate lesson plan to teach students about physical fitness.

Stress Management

  • Define stress.
  • Identify potential stressors of teachers and students.
  • Explain the health effects of stress.
  • Identify effective ways to deal with stress.
  • Develop a lesson plan to teach students about stress management.

Alcohol, Tobacco, Drug Use/Abuse, and Sexually Transmitted Diseases

  • Examine reasons for alcohol, tobacco, and drug use and abuse.
  • Identify commonly abused substances.
  • Identify the effects of substance use and abuse on the learning process.
  • Develop an age- and grade-appropriate lesson plan on substance abuse prevention.
  • Identify local, state, and national incidences of sexually transmitted diseases.
  • Research policies regarding the teaching of sexually transmitted disease prevention and awareness.
  • Identify local programs addressing the prevention or treatment of sexually transmitted diseases.
